- 3 cans coconut milk, refrigerated overnight
- ½ cup powdered sugar
- ¾ cup Power Up Antioxidant Trail Mix
- 1 vanilla bean pod, beans scraped and pod discarded
- Carefully scoop the cream from the top of the coconut milk. Reserve the liquid for another use.
- In the bowl of stand mixer with whisk attachment, whip the coconut cream, sugar, and vanilla beans for 8-10 minutes, until fluffy.
- Gently stir in Power Up Trail Mix
- Transfer to a container with a lid. Freeze at least 6 hours.
